Recipe: Crockpot Pulled Pork & Sweet Plantain Guacamole

Pork Guacamole Recipe

During the winter I love crockpot recipes because they’re super easy and convenient!  Just toss in some of your favorite vegetables, spices, and a protein and you’ve got yourself a hearty meal that will last you all week.  But as you know, spring and summer are usually all about the grille, but don’t put your crockpot away just yet!  We’ve got an amazing pulled pork and guacamole recipe – the perfect duo – for a taco night out on the porch on a hot summer night.  If you really want to get fancy add a margarita and you’ve got yourself a party.

CrockPot Pulled Pork

Ingredients

  • 4 lb bone in pork shoulder
  • 4 tbsp smoked paprika
  • 2 tbsp sea salt
  • 2 tbsp chili powder
  • 2 tbsp ground cumin
  • 1 tbsp ground black pepper
  • 1 tbsp dried oregano
  • 1 tbsp ground white pepper
  • 2 tsp cayenne pepper (leave out if to spicy)
  • 1 full batch of Beasty BBQ Sauce

What’s better with pulled pork than a dollop of guacamole?  We also love exploring new flavor combinations especially with a classic side dish that’s fast and easy to make like guacamole. With simple ingredients you can have something incredibly tasty and savory in minutes.

Avocado’s are one of nature’s superfoods. They’re packed with with monounsaturated fats, which fight heart disease and can help to reduce potentially harmful cholesterol. They’re also abundant in antioxidants that protect cells from nasty free radicals and essential vitamins like K, C, B5, B6, and E. They’re also loaded with potassium, which is an important mineral for water balance, electrolytic functions, and even muscle strength.

Plantains are also a good source of Vitamins A, B6, and C, which are immune boosters and powerful antioxidants.  They also provide minerals like iron, which is essential for red blood cell production and metabolizing protein; magnesium and phosphorous for bone strength.  Just like avocados, they are also packed with potassium, which plays an important role in cell and body fluids that helps control heart rate and blood pressure, countering negative effects of sodium.

Crock Pot Pork Guac

Sweet Plantain Guacamole

Ingredients

  • 2 tablespoons coconut oil
  • 4 cloves garlic, minced
  • 1 large brown plantain, peeled and diced
  • 2 tablespoons water
  • 3 large avocados, cut in half and pitted
  • ¼ medium white onion, finely chopped
  • Handful of cilantro, roughly chopped
  • 1 tsp minced jalapeño pepper
  • Juice of ½ lime
  • ¼ tsp smoked paprika
  • Fine-grain sea salt and freshly ground pepper, to taste
